What is better than usual pasta with tomato sauce? Baked pasta with an incredibly cheesy sauce, ofcourse!
I really didn’t believe in this dish at first, but it’s always best when you don’t think about it. I love the cheese sauce way too much – nutritional yeast is just heaven! If you haven’t tried these magical little flakes, please do, because they are just the best thing ever. I can’t believe that they are really made out of yeast.
I love baked things in general, baked porridge for example is just my favourite. Things get sticky in the oven and I just love that consistency!
I think the cheese sauce would be great with the pasta alone, too. You could recreate a mac ´n cheese or just serve it with nachos. So happy to have found the recipe! Sweet potato and mustard may seem weird at first, but they make the flavour so good.
I’d love to know how you like the recipe rhythm right now, is one per week okay? For me it’s amazing, because I really get to try out the recipe twice and make little changes to it. And I can concentrate on doing the photos, which is what I want to get better at.

prep time: 5 minutes | cook time: 35 minutes | total time: 40 minutes | serves: 5 people
500 g pasta of your choice
1 tbsp tomato paste
1 tsp oregano
1 tbsp mixed herbs
juice of 1/2 lemon
1 onion, finely chopped
2 garlic cloves, finely chopped
8 cherry tomatoes, quartered
¼ cup plant milk (I used oat milk)
1/2 cup nutritional yeast
¼ tsp mustard
½ sweet potato
1. Cook the pasta following the packing instructions. Chop the sweet poato roughly and boil it. Heat a pan and fry of onion, garlic, herbs and tomato paste in a bit of water. If necessary, add more water. Take the sweet potato out when you could mush it with a fork and put it aside to cool down. Add the tomatoes to the garlic onion mix and let it simmer for a few minutes.
2. Preheat the oven to 180C° (356F°) and put the pasta into a big oven dish or a quiche dish. Blend all the cheese sauce ingredients. Pour the tomato sauce over the pasta and carefully stir a bit. Then add the cheese sauce on top and even it out a bit. Bake it in the oven for 20 to 25 minutes. Take it out and enjoy!
