You might be surprised by how easy this week’s recipe is, but let me tell you – easy doesn’t mean bland or boring. These balls are one of the most exciting things I’ve ever made!
And mum’s kind of addicted to them now, especially to the chocolate-coated ones. I admit that these balls or energy balls or bliss balls are not a new idea, you can find lots of different recipe on the internet these days, but I wanted to try them so bad that I just did. I love everything coconut and I love a Christmas specialty called coconut macaroons. Date Coconut Balls are my mid-September version; I don’t want to call it Christmas baking yet.
You literally need 5 minutes to make these and you have snack for a busy week. I guess most people have the ingredients in the house, at least for me they are staples. If you don’t like coconut I recommend you to switch shredded coconut with almonds or cashews, just test it out and adjust to your likings.
I love them pure, coated in more shredded coconut or with a chocolate glaze, so feel free to try all these things out. Another great idea would be, crumbling some cookies and rolling your snack balls in them. Or just try out different chocolate flavours. I used orange-thyme chocolate which made the ball taste a bit more like citrus, but still delicious.
And please guys, don’t share them with anyone or they will eat them all up. Even my friend who liked neither dates nor coconut enjoyed these balls.

14 medjool dates, pitted
1 big cup shredded coconut
1 heaped tbsp. cashew butter
more coconut (optional)
1. Blend all the ingredients in a food processor until you have a sticky dough. Scoop out one tablespoon at a time and press the dough together in your hands. Then form a ball and proceed to do so with the rest of the mixture. You should get about 14 balls out of this recipe, depending on the size of your balls.
2. Leave them like this or coat them in chocolate or shredded coconut.
